Soaked dried Chickpeas overnight. Typically I make at least a double batch. Drain. Bring to a boil then on medium heat for 1 1/2 hours
As dried chickpeas boil in stock pot – garlic, leek, jalapeño in oil in cast iron
Add favorite spices – turmeric, cumin, pepper to leek, garlic oil mixture. Then add veggies – whatever is on hand – perhaps diced carrots, zucchini. Tomatoes. Sauté veggies for a few minutes to spread flavor,
Add COOKED chickpeas to veggies mixture – adding water as neededSeason as you like – adding vegan broth
Add Orzo. For some it is preferable to boil orzo in a separate pan. Put it stew but need to keep stirring so does not stick to pan. Also do not want to over cook
